Copperas Cove

Copperas Cove was founded as a small ranching and farming community back in 1879 in the “Five Hills” area of Central Texas. Originally, residents wanted to name the town simply “Cove” after its geographic location between hills while establishing its post office, but the name was already taken by Langford Cove’s (now Evant) post office. So instead, they chose the town’s current name because of the copper-like flavor of the local water supply.

Like many other cities in the surrounding area, the arrival of the Gulf, Colorado and Santa Fe Railway shortly after the town’s founding helped the economy gain steady footing and included such expansions as an opera house, barber shop, hotels, and a cotton gin, among other endeavors. Fort Hood brought further growth after its establishment in the 1940s. Copperas Cove now has a population of over 30,000 and is the largest city in Coryell County.

Dining

Copperas Cove has quite the variety of cuisine for all tastes. Start your day at Something in Between for an array of mouth-watering breakfast choices, or if you’re in the mood for barbecue or down-home country cooking, try Bandit’s BBQ & Catering, Monty’s Old School BBQ, or Lil-Tex for a meal that will leave you fully satisfied. If you want something a little more ethnic, Copperas Cove has options like Giovanni’s Italian Restaurant & Pizzeria, Herb Thai, Toa’s Ohana Hawaiian Restaurant, or German Imbiss. When you’re ready for dessert, Waffle Cone serves up homemade ice cream, shaved ice, and gelato.
